  • 1 kilogram of onions;
  • 5 tablespoons of olive oil;
  • 6 sprigs of fresh or dry thyme;
  • 1 – 1.5 liters of beef broth;
  • baguette;
  • 200 – 250 grams of hard cheese;
  • salt.


First, prepare the beef broth. To do this, cook a piece of beef in 4 – 6 glasses of salted water, preferably on the bone (it will be tastier this way).

Peel the onion and cut into thin strips. Pour a little olive oil into the pan and add the onion. Stir fry until soft and caramelized. It takes approximately 20 – 30 minutes.

Pour about 1 cup of broth into the pot and add the thyme. Keep cooking. When the onion is thick enough, add 1 more cup of broth.

When the liquid has evaporated again, pour the rest of the broth into the pan. Keep stirring and wait until the soup reaches the desired viscosity.

Make toast. To do this, cut the baguette, put the pieces on the cake and put in the oven for 180 degrees for a few minutes.
