Seasonal salad with celery and chicory

Ingredients:

  • 100 grams of arugula;
  • 2 small heads of lettuce chicory;
  • 2 celery stalks;
  • 1 medium red apple;
  • 50 grams of hemp seeds;
  • one 2 tablespoons of sprouts of any greens;
  • 1/4 cup chickpeas;
  • 1 cucumber;
  • 3 radishes.

For refueling:

  • juice of 1/2 lemon;
  • 1 tablespoon of natural vinegar;
  • 4 tablespoons of olive oil;
  • Salt pepper according to your taste.

How to prepare salad:

  1. Put the chickpeas to boil, and in the meantime, take on the preparation of the rest of the vegetables.
  2. Chop the chicory and celery and place in a deep bowl.
  3. Cut the apple into thin slices, sprinkle them with lemon juice so that they do not darken and pour over the celery and chicory.
  4. Add arugula, chickpeas and hemp seeds.
  5. For the sauce, mix all the ingredients necessary for it and season the salad. Mix everything well.

Salad with celery and chicory

Ingredients:

100 gr arugula
2 small forks of chicory salad
2 celery stalks
1 medium red apple
50 gr hemp seeds
1-2 tbsp sprouts of any greens
1/4 cup chickpeas
1 cucumber
3 radishes

For refueling:
juice of 1/2 lemon
1 tbsp natural vinegar
4 tbsp olive oil
salt, pepper to taste

Cooking:

Boil chickpeas.
Prepare the dressing. To do this, mix the juice of half a lemon, vinegar, olive oil, salt and pepper.
Cut the chicory and celery, and then put in a salad bowl.
Add arugula and chickpeas.
Cut the apple into thin slices, after removing the core with seeds. Drizzle the apple with lemon juice to keep it from browning. Put the apple in a salad bowl with the rest of the ingredients.
Add hemp seeds.
Pour dressing over salad and toss to combine.
Decorate with green sprouts.
